As I’ve said before, I love cookies. 🙂 I love chocolate and peanut butter together even more. Chocolate peanut butter ice cream is my all time favorite! Oh my. Bake me some brownies, cover them with peanut butter and chocolate frosting and you’ve got me for life!!
When I got my 2nd Thrive Market order last week, there was Swerve and Lily’s Sugar Free Chocolate Chips in the box. The first thing I made was sugar free chocolate chip peanut butter cookies. Mmmm good! The recipe I used is this one from my Pinterest board, pinned from www.gimmesomeoven.com. There are only 4 ingredients for this recipe and one is sugar. I used Swerve instead and you can get here for a great price.
Also, just a side note, the peanut butter I used was Skippy Natural. It does have 3 grams of sugar for 2 tablespoons. So these aren’t completely sugar free, but almost.

The recipe is:
1 cup unsweetened natural peanut butter
1 egg
1 cup swerve
1/2 cup Lily’s sugar free chocolate chips
Mix it all together, form whatever size balls you want smash them and bake for 8-10 minutes at 350°
These are super quick and easy to make. I threw them together after dinner for the company we were hosting.
Since I was on a chocolate peanut butter kick and had some Lily’s Chocolate Chips left over. I wanted to try making Sugar Free Peanut Butter Cups again. I made them the first time a few weeks back with unsweetened baking chocolate. I didn’t add enough stevia to them and they were too bitter for me. I really prefer semi sweet chocolate over any other kind.

These peanut butter cups are the bomb! (“Literally she’s not joking.” -Micah) (Good grief, that’s what I get for letting my 16 yr old edit!) They will from now on be a staple in my home for sweet treats. I’m going to have to try to double the recipe next time, because they do not last long.
Refrigerate about an hour.
