The Easiest 3 Ingredient Crock Pot Chicken Soup

Have you ever just wanted to come home from your day and just have dinner waiting for you?  It’s cold. It’s wet. You just wanna be warm and fed.  That’s of course where crock pots come in handy. If you don’t have one, get one.  You will be thankful you did.  Mine was given to me by a friend over 15 years ago.  I loved it then and I love it now.  It was the best gift!

 

The other day, I was at work and it was about 1 in the afternoon.  I was thinking about dinner, cuz I hadn’t really pre planned my week.  Chicken soup just sounded so yummy.  With warm dinner rolls from the oven. I made a quick mental note of what I had and what I could try.  I’ve never just put homemade soup in the crock pot before and I just figured I’d try it.  So I called my son, who hadn’t left for work yet and had him get the crock pot out.  I asked him to take:

1 pound frozen chicken breast from the freezer and put it in the crock pot.
1 quart of Organic Free Range Chicken broth from the cabinet and add it on top.
1/2 cup of the mixed white, brown and quinoa rice and add it to the pot.

Cover it. Turn it on high and walk away.

When I got home at 4.  I added some garlic, salt, pepper and paprika to taste.  I didn’t add thyme and I was out of sage.

I then got started on this AMAZING 1 Hr. Dinner Roll Recipe from What Is On Your Menu This Week?  that I have used several times and have never been disappointed.  I’m sure you won’t either!

My family loved dinner.  We ate on it a few nights so that’s a BONUS! 🙂

  1. This sounds yummy and so easy – why didn’t I think of this??? Can I substitue noodles for the rice? And how many hours did you actually cook all of this? Weren’t you afraid it might go dry of liquid and you’d come home to a burned dinner and ruined crockpot?

    1. Hey mom. You could use noodles but I’d put them in at the end just till they were soft. This cooked for about 3 hours on high, then another 1.5 hrs on low. There was a whole quart of chicken broth so I wasn’t worried. 🙂
